This chocolate eclair dessert is my daughter’s favorite. My mother used to make it for her every holiday, partly because she loved it and partly because it’s so easy to make. I’m not sure, but she may have stolen the recipe from her mother-in-law.

When I make it, I put a little of the filling and chocolate in a separate bowl. Her boyfriend can’t have gluten.

If you’re looking for something sweet and easy, this is the ticket. It’s no bake and uses just seven ingredients.

Chocolate Eclair Dessert

1 container of Cool Whip
2 packages instant vanilla pudding
1 1/2 to 2 oz unsweetened chocolate
6 tbsp butter
3 cups of milk and 3 tbsp
Graham crackers
1 1/2 cups powdered sugar

Line the bottom of a 9×13” glass pan with graham crackers.

Mix 2 packages instant vanilla pudding with 3 cups of milk. Beat in container of Cool Whip.

Pour mixture over graham crackers. Line top with an additional layer of graham crackers.

In a saucepan, melt unsweetened chocolate with butter and three tbsp milk. Add 1 1/2 cups powdered sugar and still until smooth. Quickly pour over graham crackers.

Chill for one hour and then serve.

This is a great dessert for carry-ins and holidays. I never bring any home.

And, because it’s no bake, you can even make the chocolate eclair dessert in a large sealable container. When Amanda is away at college, I buy the disposable casserole sized containers and take it to her. I think she shares it with her friends.
