Baked Mashed Sweet Potatoes

Some of my favorite recipes aren’t really recipes at all. These baked mashed sweet potatoes are no exception. As a matter of fact, it seems kind of silly to include them in the recipe section.

My kids love the sweet potatoes that they have at some of the chain steakhouses. They were always begging me to make them. They’d want a sweet potato for lunch or even a snack. And, though it’s a simple process, it was kind of a pain baking them one to two potatoes at a time.

So once every week or so, I make up a batch of mashed sweet potatoes to keep in the fridge. If the kids need a little snack, they will reach for the sweet potatoes. Also, if I’m making a meal and need an extra side dish, I know I have a batch in the fridge.

Baked Mashed Sweet Potatoes

10-12 large sweet potatoes
1 stick butter – cut into cubes

Preheat oven to 400 degrees. Line large cookie sheet with aluminum foil or parchment.

Wash sweet potatoes and place on cookie sheet. Pierce each potato two to three times with a knife.

Bake potatoes for one hour. Turn off oven. Allow potatoes to cool until able to handle – either overnight or a few hours. (I leave the oven light on so I remember they’re in there.)

Remove skins. Combine with butter in large bowl and mix with electric mixer until smooth. 

Store in a covered container in the refrigerator. Microwave individual portions as desired. Though I think this dish is sweet enough as is, my kids like to add a sprinkle of either brown sugar or cinnamon to dress it up a bit.

You can easily adjust quantities on this to fit the size of your family.


There you have it. These sweet potatoes make an easy side dish or a self-serve, healthy snack for the kids. Now if I could only get them this excited about the other vegetables!
